Strawberry Supreme Overnight Oats

Breakfast on the run can be tricky on those busy mornings while simultaneously feeding the dog and getting ready for the day, making sure bags are packed, teeth are brushed and the kiddos are at the bus stop in time. But starting the day off right with a nutrient dense meal is a vital component when it comes to alertness in the classroom and brain power. Sugary cereals, refined breads, doughnuts and waffles may be number one picks due to their appealing flavors with the little ones but they provide little to no nutrition and deplete the body of vitamins and cause an energy melt down around the same time that class bell rings. Our overnight oats taste like a big old dish of strawberry shortcake and whip cream but are loaded with complex carbohydrates, essential fatty acids and nutrient dense superfoods. A balanced breakfast in a grab and go convenient jar that can be eaten anywhere from the kitchen table, to the back of the bus or in the school yard line up. 

Set aside several 125 ml mason jars with lids.

  • 12-15 strawberries washed and diced
  • 2 cups Oats
  • 1 ½ cups of coconut milk (or plant based milk of your choice)
  • ½ cup of coconut yogurt
  • 1 tablespoon of plant based omega oil (our top pick and children friendly “UDO’s 3-6-9)
  • 1 tsp of a pure superfood powder (we used gogi berry)
  • ½ cup chia seeds
  • 1 tbsp (or more depending on desired sweetness) of maple syrup

Mix all ingredients in large glass bowl with lid. Refrigerate a minimum of 2 hours to overnight.  Portion into mason jars and top with your choice of toppings. Some of our favorites include cacao nibs, diced bananas, shredded coconut and hemp seeds.

Keeps in the fridge for up to 4 days in your sealed mason jars.
